Baked Blueberry Pudding

1/2 cup plus 1 tablespoon of margarine
1/2 cup of brown sugar
2 cups of blueberries
1/2 cup of sugar
1 egg, lightly beaten
1/2 cup of milk
1 cup of flour
1 teaspoon of baking powder
Whipped Cream


Preheat oven to 350ºF. In a saucepan, combine 1 tablespoon of margarine and brown sugar. Cook over medium heat until  sugar melts. Stir in blueberries and pour into greased baking dish. Beat together the remaining margarine and 1/2 cup of white sugar, beat in egg and milk. Sift together flour and baking powder. Combine with mixture and cover blueberry mixture with the batter and bake for 30 minutes. Serve with whipped cream
