Fudge Rice

2 cups of milk
1 cup of cooked rice
1/4 cup of sugar
2 tablespoons of flour
1/4 teaspoon of salt
2 eggs, beaten
1/2 teaspoon of vanilla
1/4 cup of chopped walnuts

Instructions:

Scald milk in heavy saucepan. Stir in rice. Mix sugar, flour and salt. Whisk into scaled milk. Cook, stirring over medium heat, for 5 minutes. Stir small amount of hot mixture into eggs. Then stir back into saucepan. Cook stirring for 1 minutes. Add vanilla. Pour into shallow, 1 1/2 quart buttered baking dish. Bake at 300ºF.  for 30 minutes until knife inserted comes out clean. Cool slightly. Spread with fudge topping. Sprinkle with nuts. Let stand until firm.

Fudge topping:
1 cup of powdered sugar
A dash of salt
1 1/2 tablespoons of milk
1 tablespoon of softened butter
1 1/2 squares of unsweetened chocolate melted
1/4 teaspoon of vanilla

Beat powdered sugar, salt, and milk together, stir in butter, chocolate and vanilla. Beat until blended, and of spreading consistency.
