Homemade Marshmallows
2 cups of granulated sugar
3/4 cup of water
2 tablespoons of gelatin
1/2 cup of cold water
1 teaspoon of vanilla
1/2 teaspoon of salt
cornstarch
confectioners' sugar
Mix granulated sugar with 3/4 cup water. Simmer to a soft boil; remove
from heat. Soften gelatin in cold water. Place on large platter. Pour
hot syrup over softened gelatin. Stir until dissolved. Let stand until
partially cooled; whip until thick and white, and mixture nearly holds
its shape. Add vanilla and salt. Pour into straight-sided pans lined
with a mix of equal parts cornstarch and confectioners' sugar. Let stand
in cool place until firm (not in refrigerator). Cut into squares with
scissors and dust with confectioners' sugar. |
