| Acorn Squash w/Spiced Applesauce & Maple Drizzle
1 acorn squash (about 1 1/2 lbs), deseeded, and cut into 6 wedges 2 teaspoons olive oil 1/4 teaspoon of salt 1/8 teaspoon of freshly-ground black pepper 3/4 cup of unsweetened applesauce 2 teaspoons of butter 1/8 teaspoon of ground cinnamon 1 tablespoon of Atkins Sugar Free Pancake Syrup, warmed |

Heat oven to 375ºF. Brush squash with oil and sprinkle with salt and pepper. Place on a jelly roll pan lined with aluminum foil. Bake until squash is fork tender, about 20 minutes. In a small pot heat the applesauce. Stir in butter and cinnamon; cook 1 minute more. Serve squash with a dollop of applesauce and a drizzle of syrup. This recipe yields 6 servings.
