Cow Camp Pinto Beans

2 1/2 cups of dried pinto beans
7 to 8 cups of water
3/4 teaspoon of salt



Sort and wash beans; place in a Dutch oven.
Cover with water 2 inches above beans; let soak 8 hours.
Drain beans and return to Dutch oven. Add 7 cups of water.
Bring to a boil; cover, reduce heat and cook 2 hours or until tender. Add extra water if necessary.
Stir in salt. Yield: 6 to 8 servings
