Cucumber Combo
3 large onions, sliced
2 medium size green peppers, seeded and chopped
2 cloves garlic, minced
1/2 cup of butter or margarine
6 medium cucumbers, cut into 1/2 inch thick slices
4 tomatoes, peeled and coarsely chopped
2 bay leaves
1 teaspoon of salt
1/2 teaspoon of pepper
Saute onion, green pepper, and garlic in butter in a
large Dutch oven until vegetables are crisp tender. Stir
in cucumber slices and tomatoes; add bay leaves, salt,
and pepper. Stir well; cover and simmer 35 minutes.
Remove bay leaves; discard. Serve immediately. Yield: 8
to 10 servings |
