Oven Barbecued Pork Cubes

3 pounds of boneless lean pork, cut into 2 inch cubes
2 tablespoons of shortening, melted
1 teaspoon of salt
1/4 teaspoon of pepper
one 8 ounce can of tomato sauce
1 medium onion, sliced
1/2 cup of chopped celery
1/2 cup of water
1/2 cup of catsup
2 tablespoons of firmly packed brown sugar
2 tablespoons of prepared mustard
1 tablespoon of Worcestershire sauce
Hot cooked rice



Brown pork in shortening in a heavy skillet over medium heat; drain well.
Place pork in a large Dutch oven; sprinkle with salt and pepper. add tomato sauce, onion, celery, water, catsup, brown sugar, mustard, and Worcestershire sauce, stir well. Cover and cook over low heat 2 hours and 10 minutes. Uncover and simmer an additional 20 minutes, stirring occasionally. serve over rice. Yield: 4 to 6 servings.
