Roast
Pork with Sweet Potatoes and Apples
1 boneless pork roast (4 pounds), trimmed of fat
1/3 cup of honey
1/4 cup of orange juice
1/4 cup of apple juice concentrate
1 tablespoon of ground black pepper
1 tablespoon of packed brown sugar
3 large sweet potatoes, halved
3 large apples, cored and quartered
Preheat the oven to 375ºF. Coat a large Dutch oven
with no-stick spray and place over medium-high heat until
hot. Add the pork. Cook for 2 minutes, or until brown. Turn
and cook for 2 minutes, or until brown. Remove from the
heat. In a medium bowl, combine the honey, orange juice,
apple juice concentrate, pepper, and brown sugar. Spoon over
the pork. Place the sweet potatoes around the pork. Cover
and bake for 2 hours, or until the pork has an internal
temperature of 150ºF. Place the apples around the
pork. Bake, uncovered and basting frequently, for 20
minutes, or until the apples are just tender. Let the pork
stand for 10 minutes before slicing. Serve with the sweet
potatoes and apples. Serves 8.
