"Fried" Eggplant
Slices
1 1/4 pounds of eggplant, peeled and sliced thin
1/2 cup of powdered skimmed milk
1/8 teaspoon of garlic powder
1/8 teaspoon of oregano
salt and pepper, to taste
Salt the eggplant slices and let stand for 15 to 20 minutes; wipe with
paper towels. Dip the eggplant slices in dry mixture made from all of
the other ingredients (cover both sides of the slices). Place on a
Teflon cookie sheet and bake for 5 minutes in a 350ºF. preheated oven.
Maintaining the same oven temperature, place the pan in the broiler part
of the oven for 3 to 5 minutes, or until the top is nicely browned.
