Chicken
12 pieces of chicken
6 1/2 ounces of can pineapple chunks
1/2 cup of maraschino cherries
3/4 cup of green pepper slices
1/4 cup of vinegar
1/4 cup of brown sugar
1/2 cup of soy sauce
2 tablespoons of cornstarch
1/2 cup of water |
| Brown chicken with a small amount of oil in skillet,
remove and place in shallow baking pan. drain pineapple, reserve juice. Mix
pineapple juice, vinegar, brown sugar, and soy sauce. Add pineapple chunks
and cherries and pour over the chicken, Bake at 350ºF. for 35 minutes. Add
green pepper slices and return to oven for 10 minutes. Remove chicken from
pan and set aside. Mix cornstarch and water and add to juices in pan. Heat
to make sauce. Arrange chicken pieces over platter of steaming hot rice,
pour fruit and pepper sauce over the chicken and rice. Hawaiian Cookbooks
