| In a 12 inch skillet, heat oil over medium high heat and cook the chicken with garlic until the chicken is thoroughly cooked. remove the chicken and set aside. In the same skillet, add potatoes and bell pepper. Cook over medium heat, stirring occasionally, 5 minutes. Stir in the remaining ingredients, Bring to a boil over high heat. Reduce the heat to low and simmer covered, stirring occasionally, 35 minutes or until the potatoes are tender. Return the chicken to skillet and heat through. Makes 6 servings
