Baked Stuffed Shad
1 medium sized Shad
1 cup of bread crumbs, moistened with milk
1 stalk celery chopped fine
2 tablespoons of catsup
1 onion, chopped fine
salt and pepper
lemon juice
6 - 8 strips of bacon |

Stuff shad with dressing made of crumbs,
onion, celery, catsup, salt, and pepper. Tie shad with string, place in
greased baking dish and top with bacon. Bake about 1 hour at 325ºF. basting
several times with lemon juice.
