Broiled Fresh Salmon Steaks
4 salmon steaks
4 tablespoons of lime juice
1 tablespoon of butter
pepper to taste
4 teaspoons of tarragon
1/2 cup of dry white wine or dry vermouth |

Place salmon in shallow baking pan. Sprinkle
with half the lime juice and dot with butter. Season with pepper and half
the tarragon. Pour wine or vermouth around but not over steaks. Broil for 10
- 15 minutes, basting twice the last 5 minutes, Turn salmon, season with
remaining ingredients, and broil 5 minutes longer. Baste twice more. Serve
with sauce poured over fish. Serves 4
