Mushrooms & Green Beans A La Cheddar
1 pound of fresh mushrooms or two 6 to 8 ounce cans of
sliced mushrooms
5 tablespoons of butter or margarine
2 tablespoons of flour
milk
1 1/2 cups of shredded Cheddar cheese
4 drops of hot pepper sauce
one 10 ounce package of frozen cut green beans, cooked and drained, or
1 one pound can of cut green beans, or 3/4 pounds of fresh green beans,
cooked and drained
2 to3 slices of toast, cut in triangles
2 tablespoons of toasted slivered almonds, optional
Rinse, pat dry and slice fresh mushrooms ( makes about 5 cups) or
drained canned mushrooms, reserving 1/2 cup of the liquid. In a large
skillet melt 3 tablespoons of the butter. Add mushrooms and sauté for 5
minutes, stirring frequently. Set aside.
In a medium saucepan melt the remaining 2 tablespoons of butter. Stir in
flour, cook and stir 1 minute. Gradually blend in 1 cup of milk if using
fresh mushrooms or if using canned mushrooms, 1/2 cup of milk and the
reserved 1/2 cup of mushroom liquid. Bring to boiling point, stirring
constantly.
Remove from heat and stir in 1 cup of the cheese and hot pepper sauce.
stir in reserved mushrooms and green beans. Reheat until just heated
through. Spoon into a shallow 1 1/2 quart ovenproof serving dish.
Sprinkle with remaining 1/2 cup of cheese. Broil 4 inches from source of
heat about 3 minutes or until cheese is melted.
Garnish with toast points and almonds. Delicious served with ham. Makes
4 to 6 servings |
