Savory Green Beans & Red Peppers
2 pounds of fresh whole green beans, stemmed 1 1/2 cups of boiling water 1/2 teaspoon of salt 2 red peppers, seeded and cut in strips 2 tablespoons of butter or margarine A few twists of freshly ground black pepper
Cook the green beans in boiling, salted water about 10 to 15 minutes, or until as tender as you like. Toss beans once during cooking to cook evenly. Add pepper strips and cook 2 minutes longer. Drain, save liquid, either to drink or to use in soups or gravy. Add butter and pepper, tossing until well combined. Serve immediately. Makes 6 servings |
