Christmas Ham (Sweden)

1 cooked ham
4 cups of water
1 onion, cut into quarters
1 carrot, sliced
10 peppercorns
1/2 teaspoon of cloves
1 bay leaf
1 egg white
1 tablespoon of dry mustard
1 tablespoon of sugar
1 cup of fine bread crumbs

Place ham in large roasting pan with fatty side up. Add water, onion, carrot, peppercorns, cloves and bay leaf. Bake at 350ºF.  for 1 hour. Replace water which has evaporated, turn ham. Bake for 1 hour longer. Remove rind and most of the fat from ham. Chill fatty side up inn liquid overnight. Brush with mixture of egg white, dry mustard and sugar. Sprinkle with bread crumbs. Bake at 450ºF. for 45 minutes or until golden brown. Garnish with prunes and applesauce. Serve with red cabbage
