Combine the meats, eggs, bread crumbs, 1 tablespoon of brown sugar and milk, mixing well. Form into loaf, place in a 9 x 5 x3 inch loaf pan. Mix remaining ingredients, pour over ham loaf. Bake at 350ºF. for 1 hour and 30 minutes, basting several times. Makes 8 servings Ham Loaf 2 2 tablespoons of melted butter 1/4 cup of brown sugar pineapple wedges 4 cups of ground cooked ham 2 tablespoons of grated onion 1/2 teaspoon of dry mustard 1 cup of soft bread crumbs 1/2 cup of pineapple juice 2 eggs, well beaten a dash of cayenne Combine the melted butter with brown sugar; place in loaf pan. Arrange pineapple wedges over butter sugar mixture, Mix remaining ingredients; pack over pineapple and brown sugar. Bake at 375ºF. for 30 minutes. Invert loaf on platter with pineapple on top. Makes 6 servings
