Ham Patties with Sour Cream

2 cups of ground cooked ham
1 tablespoon of grated onion
1/2 cup of dry bread crumbs
1 1/2 tablespoon of chopped parsley
1 teaspoon of prepared mustard
1/8 teaspoon of salt
2 eggs, slightly beaten
2 tablespoons of butter
1/4 cup of water
1/2 teaspoon of paprika
1 cup of sour cream

Combine the ham, onion, bread crumbs, parsley, mustard and salt in a bowl. Add the eggs and blend well. Shape into patties and brown in butter, on both sides. Keep warm. Combine the water and paprika in a saucepan and heat to boiling point. Remove from heat and stir in sour cream. Spoon over ham patties and garnish with additional parsley, if desired.
