1 cup of cracker crumbs 1 cup of butter, softened 1 pound of ground ham 1 medium onion, chopped 1 cup of cooked rice 1 cup of milk, scaled 3 eggs, beaten 1 tablespoon of chopped green pepper 1 pound of grated cheese
Mix the cracker crumbs and butter and reserve 2/3 cup for topping. Press the remaining crumb mixture in a 1 1/2 quart baking dish. Combine the ham, onion and rice and spread over crumb mixture. Stir the ilk into eggs slowly and add the green pepper and cheese. Pour over casserole and sprinkle with reserved crumb mixture. Bake at 325ºF. oven until heated through.
