Ham & Sweet Potato Casserole 1 1/2 cup of cubed cooked ham 1/2 cup of sliced celery 4 tablespoons of butter or margarine 1 teaspoon of dry mustard one 10 1/2 ounce can of mushroom gravy one 9 ounce package of frozen cut green beans 1 cup of mashed sweet potatoes 1 teaspoon of grated lemon rind
Brown the ham and celery in 2 tablespoons of butter in a saucepan. Add the mustard and mushroom gravy. Cook the beans according to package directions and rain. Add to the ham mixture, mix well and pour into a 1 quart casserole. Combine the sweet potatoes, remaining butter and lemon rind and mix well. Spoon around edge of casserole. Bake at 350ºF. oven for 30 minutes or until heated through. Makes 4 servings |
