Cheesy Fish & Vegetables
one 10 ounce package of frozen broccoli, cauliflower, and carrots in
sauce
1 pound of farm raised catfish fillets, or orange roughy fillets
1/4 teaspoon of lemon pepper seasoning
1/4 cup of chicken broth
1 tablespoon of chopped fresh parsley

Cook the vegetables according to the package directions, set
aside.
Sprinkle fish with lemon pepper seasoning; place in a single layer in a
large skillet. Add broth. Bring to a boil. Cove, reduce heat and simmer 10
minutes or until fish flakes easily when tested with a fork. Remove to
a serving platter with a slotted spoon, reserving drippings, keep warm.
Cut open bag of cooked broccoli, cauliflower and carrots, pour into skillet
with reserved drippings. Cook over medium heat until heated.
Spoon vegetables and sauce over fish, sprinkle with parsley. Yield 4
servings
