Beets in Balsamic
Vinegar Sauce
2 tablespoons of olive oil
2 tablespoons of balsamic vinegar
1 tablespoon of honey, or sugar
3 cloves of garlic, minced
1 teaspoon of Dijon mustard
1/4 teaspoon of salt
1/4 teaspoon of ground black pepper
1 pound of sliced beets
1 cup of chopped sweet red peppers
1/3 cup of chopped fresh parsley
1/4 cup of chopped onions
In a large bowl, combine the oil, vinegar, honey or sugar, garlic,
mustard, salt, and black pepper. Mix well. Add the beets, red peppers,
parsley, and onions. Mix well. Cover and refrigerate for 1 hour,
stirring frequently. Serves 4. |
