Green Beans
w/Mushrooms & Walnuts
2 tablespoons of chicken stock
2 teaspoons of olive oil
2 cups of sliced mushrooms
1 teaspoon of minced garlic
1 pound of green beans
2 teaspoons of chopped walnuts, toasted
1 tablespoon of chopped fresh parsley
1/4 teaspoon of salt
1/4 teaspoon of ground black pepper
In a 10-inch no-stick skillet, combine the stock and oil. Bring to a
boil over medium-high heat. Add the mushrooms and garlic. Cook,
stirring, for 5 to 8 minutes, or until the mushrooms are golden brown.
Add the beans and walnuts. Cook, stirring, for 3 to 5 minutes, or until
the green beans are crisp-tender. Stir in the parsley, salt, and pepper.
Serves 4. |
