Nacho Snackers
1/2 cup of shredded low-fat cheddar cheese
1 small pickled jalapeno pepper, chopped
1 medium tomato, chopped
14 melba rounds or toasts
1. In small bowl, combine cheese, jalapeno pepper and tomato. Spoon 1
tablespoon mixture onto each melba round.
2. Place 4 to 6 nachos on microwaveable dish. Microwave on High until
heated through, about 45 seconds. Repeat with remaining nachos. (To bake
in conventional oven, preheat oven to 400°F. Bake prepared nachos on a
cookie sheet until heated through, about 5 minutes.)
Makes 14 servings. Preparation time: About 7 minutes. Microwave time:
About 45 seconds. Conventional oven time: About 5 minutes.
