Tropical Rice 4 cups of water 2 cups of white rice 2 teaspoons of butter or margarine 1 teaspoon salt 3/4 cup honey 1 teaspoon of ground ginger 1 teaspoon of ground cinnamon one 16-ounce can mandarin oranges in juice, drained one 15-1/2 ounce can chunky fruit cocktail, drained
Bring water to a boil over high heat. Add rice, butter and salt. Return to boil. Stir, cover, reduce heat and simmer 15 to 20 minutes. Place cooked rice in bowl, adding honey and spices while still hot. Add fruit; toss lightly.
