Snow Peas with
Basil
2 teaspoons of cider vinegar
2 teaspoons of chopped fresh basil
3 teaspoons of olive oil
1 cup of chopped sweet red peppers
1/4 cup of whole kernel corn
1/4 teaspoon of salt
1/4 teaspoon of ground black pepper
3 cups of snow peas
In a large bowl, combine the vinegar, basil, and 2 teaspoons of the oil.
Coat a 10-inch no-stick skillet with no-stick spray and place over
medium-high heat until hot. Add the remaining 1 teaspoon oil. Add the
red peppers and corn. Cook, stirring, for 2 minutes, or until the
peppers soften slightly. Sprinkle with the salt and black pepper. Add
the snow peas. Cook, stirring, for 3 minutes, or until the snow peas are
crisp-tender. Transfer to the bowl. Toss well to coat with the vinegar
mixture. Serves 4. |
