Sweet-and-Sour Onions and Pineapple

1 tablespoon of olive oil
4 medium onions, sliced
2 cloves of garlic, minced
1 can (20 ounces) of unsweetened pineapple chunks (with juice)
1/4 cup of cider vinegar
1 tablespoon of soy sauce
2 tablespoons of cornstarch
3 tablespoons of apple juice



Coat a 10-inch no-stick skillet with no-stick spray and place over medium heat until hot. Add the oil, onions, and garlic. Cook, stirring frequently, for 15 minutes, or until the onions are very soft but not browned. Add the pineapple (with juice), vinegar, and soy sauce. Bring to a boil. Place the cornstarch in a cup. Add the apple juice and stir until smooth. Add to the skillet. Cook, stirring, for 5 minutes, or until the sauce thickens. Serves 4.
