Green Vegetable Meat Loaf

2 pounds of lean ground meat
two 10 ounce boxes of frozen, chopped broccoli, thawed and drained
1 cup of chopped onion
2/3 cup of uncooked quick cooking oatmeal
2 large eggs
1/2 cup of milk or water
one 1.5 ounce package of meat loaf seasoning mix




Heat oven to 375ºF.  Lightly grease a 9x5x3 inch loaf pan. Put all ingredients into a large bowl. Mix with hands 3 - 4 minutes until well blended. Press mixture into prepared pan. Bake 1 hour in the middle of oven. Remove from oven; cover loosely with foil and let stand 10 - 15 minutes. Drain off juice. This vegetable laced meat is delicious fresh from the oven, and even better the next day cold. Serves 8
