Mushroom Meat Loaf
one 4-ounce can of mushrooms, drained
1 large carrot, chopped
1 medium onion, chopped
2 eggs
1/4 cup of catsup
1 1/2 pound of lean ground beef
1/2 cup of dry bread crumbs
1 1/2 teaspoon of salt
1/8 teaspoon of pepper
5 whole medium mushroom caps |

Place first 3 ingredients in a blender container. Process for
several seconds until finely chopped. Transfer to a bowl. Add
eggs, catsup, ground beef, bread crumbs, salt, and pepper,
mixing well. Place half the ground beef mixture into a greased 5
X 9-inch baking pan. Arrange mushroom caps in indentation in
center. Cover with remaining ground beef mixture, shaping into
loaf. Bake at 350 degrees for 1 hour. Let stand for 10 to 15
minutes for easier slicing. Serves 6.
