Deviled Mushrooms

12 medium sized mushrooms, about 1 1/2 inches in diameter
salt
1/2 cup of ham, chopped
2 tablespoons of finely chopped shallots
1 tablespoon of prepared mustard
2 teaspoons of mayonnaise
a dash of pepper
3 or 4 pimiento stuffed green olives

 

Wipe the mushrooms gently with a damp cloth. Remove stems carefully and reserve for another purpose. Place the mushroom caps, rounded side down, around the edge of a large microwave safe plate. Sprinkle very lightly with salt. Mix the ham, shallots, mustard, mayonnaise and pepper. Spoon into mushroom caps. Top with olive slices. Microwave at 100% power for 3 minutes, rotating the plate once. Let stand for 2 minutes. arrange on platter and serve immediately. Makes 12 appetizers
