| | Cocktail Quiche Pastry for 1 crust 9 inch pie 1/2 cup of minced cooked shrimp, flaked crab meat or drained caviar 2/3 cup of heavy cream 2 eggs, beaten 2 teaspoons of chopped fresh dill 2 tablespoons of sliced scallions 1/2 teaspoon of salt |
| Preheat oven to 375ºF. Roll out pastry very thin and cut into rounds with a 2 3/4 inch cookie cutter. Fit into twenty four 1 3/4 muffin cups. Bake unfilled pastry for 12 - 15 minutes until lightly browned. Cool. Remove from metal muffin cups and place on microwave safe plates. Spoon 1/2 teaspoon of shrimp into each pastry lined muffin cup. Blend cream, eggs, dill, scallion, and salt until smooth. Spoon over shrimp. Cook at 100% power for 2 1/2 to 3 minutes until filling is set. Makes 24 quiches8/23/
