Chestnut Mousse

2 cups of chestnut puree
1 cup of icing sugar
1/4 cup of orange liqueur
1 teaspoon of vanilla
2 cups of whipping cream
Whipped cream, optional



In large bowl and using electric mixer, beat chestnut puree until smooth. Gradually beat in sugar, liqueur and vanilla. Set aside. Whip cream and fold into chestnut mixture. Spoon or pipe into eight 3/4 cup desserts dishes or wine glasses. Cover and refrigerate for at least 1 hour or up to 2 days, or freeze for up to 1 week. (If frozen, transfer to refrigerator 3 hours before serving.) Garnish with whipped cream (if using). Yield 8 servings.
