Salmon Mousse

1 1/2 teaspoon of gelatin
3 tablespoons of white wine
6 ounces of salmon
1/3 cup of yogurt
1/3 cup of mayonnaise
1 tablespoon of prepared horseradish
1 teaspoon of white wine vinegar
1 teaspoon of tarragon
1 teaspoon of lemon juice
1 teaspoon of minced onion
a few drops of Worcestershire sauce
1/3 cup of chopped fresh parsley



Dissolve gelatin in the white wine in a cup. This cup should be sitting in a shallow pan of simmering water. In a medium mixing bowl, combine the salmon, yogurt, and mayonnaise. Stir in the gelatin mix and all other ingredients. Take 2 or 3 small molds and rinse them in cold water. Pour in the mousse mixture. Chill until solid. Unmold on top of lettuce leaves, if desired.
