Fresh Tomatoes & Basil on Angel Hair Pasta
3 tablespoons of extra virgin olive oil
1 tablespoon of balsamic vinegar
3 cloves garlic, pressed
1/2 cup of fresh basil, chopped
4 cups of chopped fresh tomatoes
1/2 cup of pine nuts
ground pepper
1 pound of angel hair pasta, cooked without salt
Combine olive oil, vinegar, garlic, and basil and puree in blender or
food processor. Pour over chopped tomatoes and mix carefully. Add pine
nuts and pepper. Spoon over plates of warm pasta. Serves 4 |
