Pork & Egg Noodle Casserole

Pork & Egg Noodle Casserole

1 medium onion, sliced
1 green pepper, seeded and diced
3 tablespoons of butter
2 pounds of lean ground pork
3 cups of canned tomatoes, drained
8 ounces of cooked egg noodles
1 cup of chopped American cheese
salt and pepper to taste

Sauté the onion and green pepper in butter until soft. Add pork and cook stirring constantly until lightly browned. Add tomatoes, noodles and cheese. Season with salt and pepper mix well. Preheat oven to 350ºF.  Place pork mixture in buttered baking dish. Bake for 1 hour. Remove from oven and serve . Serves 4
