Swiss Tuna Noodle Bake
one 8 ounce package of wide noodles
salt
boiling water
2 tablespoons of butter or margarine
1/2 cup of chopped onion
1/4 cup of finely chopped parsley
1/2 teaspoon of salt
1/4 teaspoon of ground nutmeg
1/8 teaspoon of freshly ground black pepper
2 tablespoons of sherry
two 6 1/2 - 7 ounce cans of tuna in vegetable oil, undrained
one 10 ounce package of frozen peas, thawed
1 cup of shredded natural Swiss cheese
4 eggs, slightly beaten
1 cup o milk
1/2 cusp of grated Parmesan cheese
Preheat oven to 350ºF. Grease a 2 quart baking dish. Cook noodles in
salted boiling water according to package directions, drain. In large
skillet, melt butter. Add onion and parsley, cook, stirring until onion
is tender. Remove from heat, stir in noodles and remaining ingredients,
except Parmesan, mix well. Turn mixture into baking dish, sprinkle with
Parmesan. Bake, uncovered, 50 to 55 minutes or until set. Let stand 10
minutes before serving. Makes 6 servings |
