Chorizo Carbonara
1/2 pound of chorizo sausage, crumbled
1 cup of half and half
2 cups (8 ounces) of shredded Monterey Jack cheese with peppers
one 4 1/2 ounce can of chopped green chiles
1/2 teaspoon of ground cumin
one 16 ounce package of spaghetti, cooked
Brown the sausage in a nonstick skillet over medium heat; drain well on
paper towels. Set aside. Heat half and half in a small saucepan.
Combine half and half, sausage, cheese, and remaining ingredients in a large
bowl, tossing until cheese melts. Serve immediately. 8 servings
