Clams Fettuccine
1/4 cup of butter
1/2 cup of chopped onion
3 tablespoons of flour
1 teaspoon of sugar
1 teaspoon of oregano
1/2 teaspoon of salt
Pepper to taste
one 1 pound can of whole tomatoes, undrained
one 8 ounce can of tomato sauce
one 8 ounce can of minced clams, undrained
1/4 cup of sliced pitted black olives
4 cups of just cooked fettuccine
1/4 cup of grated Parmesan cheese
Melt 2 tablespoons of butter in saucepan. Add onion and sauté until
translucent.
Combine flour, sugar, oregano, salt and pepper; stir into saucepan with
onion. Add tomatoes, tomato sauce, clams, and can liquid, and olives, Cook,
stirring constantly until mixture thickens.
Combine fettuccine, 2 tablespoons of butter, and cheese; toss until pasta is
evenly coated with cheese. Place in deep serving dish; pour sauce on top and
serve. Serves 4 |
