Fajita Fettuccine
1 tablespoon of fajita seasoning
1 1/2 pounds of skinned and boned chicken breast halves
Vegetable cooking spray
1 large onion, cut into thin strips, 2 cups
1/2 large sweet red pepper, cut into thin strips
1/2 large green pepper, cut into thin strips
1 recipe Alfredo sauce
one 12 ounce package of fettuccine, cooked without salt or fat
2 tablespoons of chopped fresh cilantro
Sprinkle fajita seasoning on chicken breasts.
Coat a large nonstick skillet with cooking spray; place over medium heat
until hot. Add chicken, and cook 3 to 5 minutes on each side or until done.
remove chicken from skillet, and let cool. Cut into thin strips.
Add onion and pepper strips to skillet; cook over medium heat, stirring
mixture constantly, until vegetables are crisp tender.
Stir in Alfredo Sauce; add chicken and fettuccine, and toss gently. Sprinkle
with cilantro and serve immediately. Yield: 6 servings |
