Fettuccine w/Garlic Shrimp
3/4 cup of extra virgin olive oil
6 cloves garlic, peeled and sliced
1 fresh red chili pepper, sliced
2 pounds of large shrimp, shelled and deveined
4 fresh basil leaves or 1 teaspoon of dried basil
Salt to taste
1 pound of fettuccine
Heat oil in frying pan. Add garlic and chili; sauté for 1 minute. Add shrimp
and cook over medium high heat until shrimp turn pink, about 3 minutes. Add
basil and salt.
Cook pasta in boiling, salted water following package directions; drain.
Place fettuccine in heated serving bowl. Pour shrimp and oil remaining
in pan on top; toss and serve piping hot. Serves 6 |
