Fettuccine w/Lecso
3 tablespoons of sunflower oil
2 ounces of lean bacon, diced
2 large onions, finely chopped
2 cups of yellow pepper strips
1 1/4 cups of diced tomatoes
1 green chili pepper, cut into narrow rings
8 ounces of fettuccine
1/2 cup of grated Parmesan cheese
Heat oil in frying pan. add bacon and cook until crisp. remove from pan and
drain. Remove all but 2 tablespoons of fat from pan. Add onions and sauté
until translucent. Add peppers, tomatoes, and chill. Cook over low heat for
15 minutes. Remove from pan and toss with bacon.
Cook fettuccine in boiling, salted water until just tender, following
package directions; drain.
Place pasta in heated serving dish. add vegetables and toss well. Sprinkle
with Parmesan cheese and serve. Serves 4 |
