Fettuccine w/Peaches
8 ounces of fettuccine
1/2 cup of heavy whipping cream
1 egg yolk
2 ripe but firm peaches, peeled and sliced
1/2 cup of grated Romano cheese
1 tablespoon of finely chopped parsley
Nutmeg, optional
Cook fettuccine in boiling, salted water until just tender, following
package directions; drain.
Lightly beat cream with egg yolk. Place peaches, cream-egg yolk mixture, and
cheese in saucepan; heat gently, stirring constantly until well mixed.
Place fettuccine in heated serving dish. Add peach mixture and toss gently.
Sprinkle with parsley and nutmeg, if desired. Serves 4 |
