Fettuccine w/Pork
2 tablespoons of corn oil
1 1/4 pounds of pork fillet, cut into 1 inch cubes
1 large onion, chopped
3 large tomatoes, peeled and chopped
2 cloves garlic, peeled and crushed
2 chili peppers, finely chopped
salt and pepper to taste
2 teaspoons of lemon juice
2 teaspoons of honey
1 tablespoon of Worcestershire sauce
1 cup of hot vegetable broth
8 ounces of fettuccine
1 cup of freshly grated Cheddar cheese
Heat oil in large heavy saucepan. Add pork and onion; sauté until browned.
Add tomatoes, garlic and chili peppers. Stir in salt, pepper, lemon juice,
honey, Worcestershire sauce and vegetable broth. Cook over low heat for 30
minutes.
Cook fettuccine in boiling, salted water until just tender, following
package directions; drain.
Place pasta in heated serving dish. Top with meat sauce sprinkle with cheese
and serve. Serves 4 |
