Fettuccine with Vegetables
3/4 (16 ounce) package of fettuccine
1 cup of chopped onion
1 cup of chopped green pepper
1/4 cup of butter or margarine, melted
two 10 ounce packages of frozen spinach, thawed and drained
1 cup of shredded carrot
1/2 teaspoon of salt
1/2 teaspoon of garlic powder
1/2 teaspoon of dried whole basil
1/2 cup of grated Parmesan cheese
Cook fettuccine according to package directions; drain and set aside.
Sauté onion and green pepper in butter in a large skillet until tender; add
remaining ingredients except cheese; stir well. Cook over medium heat 8
minutes or until tender, stirring occasionally.
Combine reserved fettuccine, spinach mixture and Parmesan cheese in a large
mixing bowl; toss well. Serve immediately. Yield: 10 - 12 servings |
