Firecracker Pasta Frittata
6 cups of Chorizo Carbonara
4 large eggs, lightly beaten
1 cup of half and half
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/8 teaspoon of hot sauce
1 tablespoon of butter flavored shortening
1 tablespoon of grated Parmesan cheese
garnishes: sour cream, ground cumin, tomato wedges, pickled jalapeno pepper
slices
Combine first 6 ingredients. Set carbonara mixture aside.
Heat a 10 inch cast iron skillet in a 375ºF. oven for 15 minutes. Remove
skillet from oven, and add shortening; let stand until melted. Add carbonara
mixture. Bake at 375 for 20 minutes. Sprinkle with cheese, bake 5 additional
minutes or until lightly browned. Garnish if desired. Yield 6 servings |
