Linguine with Tuna Antipasto
One 9 ounce package of uncooked refrigerated flavored linguini, such as
tomato and herb
One 7 ½ ounce pouch of albacore tuna, flaked
One 6 ½ ounce jar of marinated artichoke hearts, coarsely chopped and liquid
reserved
½ cup of roasted red peppers, drained and coarsely chopped
¼ cup of minced parsley
1/3 cup of olive oil
¼ cup of coarsely chopped black olives
1/2 teaspoon of minced garlic
¼ teaspoon of salt
½ teaspoon of red pepper flakes
1/8 teaspoon of black pepper
½ cup of grated Parmesan cheese
Cook linguine according to package directions.
While linguine is cooking, combine remaining ingredients except cheese in
large microwavable bowl. Mix well; cover with vented plastic wrap. Microwave
at HIGH 2 to 3 minutes or until heated through.
Drain linguine; add to bowl. Toss well; arrange on 4 plates. Sprinkle with
cheese; garnish as desired. Makes 4 servings
