Linguine w/Spinach Pesto
1/2 pound of fresh spinach, cleaned and trimmed
1/4 cup of chopped fresh parsley
1/4 to 1/2 cup of grated Parmesan cheese
2 cloves garlic, halved
2 tablespoons of walnut pieces
2 tablespoons of olive oil
1/2 teaspoon of salt
1/8 teaspoon of pepper
1/2 (16 ounce) package linguine
Position knife blade in food processor bowl; add first 8 ingredients.
Process until smooth. Set aside.
Cook linguine according to package directions.
Toss linguine with pesto sauce; serve immediately. Yield: 6 to 8 servings |
