Low Calorie Ratatouille

1 medium eggplant, cubed
1 small onion, chopped
1 small green or red pepper, strips
Fresh or dried seasonings to taste (parsley, basil, garlic, pepper)
1/2 pound of fresh mushrooms
one 8 ounce plum tomatoes, crushed
Vegetable spray

Cover a non stick pan with vegetable spray and heat. Add eggplant, onion, pepper and herbs to brown, stirring constantly to avoid sticking. Add mushrooms. Add crushed tomatoes, lower heat and cover to simmer for 30 to 40 minutes.

Options: Serve over rice or pasta or use as a filler for a stuffed baked potato. Add grated Parmesan cheese or melt Mozzarella cheese for a total meal. equivalent: 1 vegetable serving
