My Best Baked Macaroni
1 1/2 cups of uncooked macaroni
6 eggs
1 1/2 cups of milk
1 teaspoon of salt
1/2 teaspoon of dry mustard
1 1/2 cups of soft bread crumbs
2 cups of shredded sharp cheese
1 cup of coarsely cut green peppers
one 4 ounce can of pimientos, chopped, drained
Cook macaroni as describes on package. Drain. Preheat oven to 325ºF.
Grease a 2 quart casserole. Beat egg yolks. Combine with milk, salt,
mustard, crumbs, and cheese. Add green pepper and pimientos. Add
macaroni. Beat egg whites stiff, until they stand in points when beater
is removed. Fold macaroni mixture into whites. Pour into prepared baking
dish. Set dish in shallow pan of hot water. Bake for 1 hour and 15
minutes. Makes 6 servings |
