Cauliflower with Noodles
2 tablespoons of oil
1 small head of cauliflower, divided into small florets
1/2 pound of thinly sliced beef
salt to taste
1 small onion, chopped
2 tablespoons of soy sauce
1 cup of beef broth
1 teaspoon of corn starch
1/2 teaspoon of cold water
1/2 pound of egg noodles
Heat 1 tablespoon of oil in heavy skillet. Add cauliflower and
beef slices; cook until lightly browned. Season with salt. Add
onion and soy sauce; cook for 5 minutes. Stir in beef broth and
simmer for 35 minutes.
Blend cornstarch with cold water; add to cauliflower mixture,
stirring until thick and bubbly.
Cook egg noodles in boiling, salted water following package
directions; drain. Heat remaining tablespoon oil in frying pan,
add noodles, and fry until golden. Drain noodles, then mix with
cauliflower. Heat thoroughly and serve. Serves 4. |
